Guiding Principles

Quite often the simplest solution is the best one. Over the past 50 years, however, our Western culture has managed to complicate matters concerning diet and its relation to health. Obesity and malnourishment exist simultaneously while the over-consumption of calorie-rich but nutrient-poor foods drain our energy. To make matters worse, we treat obesity with drugs and fad diets and combat fatigue with refined carbohydrates, sugar and caffeine. These are short-term solutions that eventually render us energy depleted, over-stimulated, chronically stressed and vulnerable to illness and premature aging. So what can we do to address this problem? Today, many health experts believe the solution is to consume primarily plant-based whole foods; pure and simple as nature intended. Whole foods support all the requirements of a healthy body system, from absorption to elimination. The challenge with whole foods has always been their relative inconvenience to prepare, compared to the gamut of fast food offerings so readily available to us. Born of the belief that one should not have to compromise between whole food goodness and fast food convenience, Vega was created with the following principles in mind: Plant-based whole foods are the true future of optimal health "Eat your fruits and vegetables." The Vega Story

Told from the onset that a plant-based diet wouldn't cut it on the professional Ironman circuit, Brendan Brazier's nutritional journey began with unpromising results. Several months of chronic hunger, the need to constantly eat and a decline in energy culminated in a decline in athletic performance. Brendan's stubborn curiosity persevered however, and after many years of research, trials and tribulations, he created a plant-based whole food diet that worked better than he had ever expected. Since then, Brendan has become one of the top professional Ironman triathletes in Canada, crediting his diet for his success competing in one of the world's most demanding sports. For years Brendan has packed plant-based whole foods into a daily blended shake to supply his body with premium fuel in liquid form for easy digestion. It worked great at home but when he traveled it became troublesome dragging around a blender and shopping for or packing along his favourite whole foods. Brendan began searching for a convenient healthy, plant-based whole food meal replacement but was disappointed in his findings. He found most meal replacements on the market were whey protein based "“ off limits for a vegan. Though some vegetarian options existed, they were all soy protein based, an ingredient Brendan was trying to cut back on due to concerns regarding GMO's and phytoestrogens. All meal replacements he found were deficient in essential fatty acids, especially Omega 3's and most contained large quantities of low quality carbohydrates (eg. maltodextrin), artificial flavors, colors and sweeteners. So Brendan put his idea on the back burner and continued to lug his trusty blender and cooler full of whole foods wherever he traveled A couple of years later, Brendan was struck by a car while training on his bike and injured his leg. Told by his doctor to take 6 months off from training and competing, Brendan sought alternative options. He underwent intense physiotherapy and began taking a product his naturopath recommended called ChlorEssence, hoping the high level of growth factors in it would help heal his injury. Plant-based whole foods: The true future of optimal health By Dr. Zoltan Rona As a medical doctor, practicing what is called "complementary" or "integrative" medicine, I have been helping thousands of people over the past 25 years with something called nutritional stress, the most underestimated cause of suboptimal health. What is nutritional stress? It's the average North American diet, high in refined carbohydrate and unhealthy fat (burgers, fries, fast foods, sugared cereals, soft drinks, chips, candy bars, chocolates). This diet is also too low in complex carbohydrates, fiber and essential fatty acids found in whole grains, legumes, seeds, nuts, fruits and vegetables. Frequent consumption of fast/convenience foods leads to many problems including food allergies. These allergies lead to cravings for more and the allergy-addiction cycle is established. Over time, the standard American diet (SAD) wears down the endocrine system and our organ reserves. Micronutrient deficiencies develop unless the individual supplements with vitamins, minerals and other important food factors. Psychological, emotional and financial stressors will amplify the nutritional stress and the next thing you know, the victim is taking antidepressants like Prozac, Paxil, Zoloft and others (to the tune of over $10 billion per year in sales). If you add to this a heavy consumption of other essential nutrient robbers such as coffee, tea, alcohol, cigarettes and drugs, the endocrine system becomes chronically stressed. This leads to high cortisol levels, high blood pressure, blood sugar control problems, high blood fats, especially cholesterol and triglycerides as well as obesity. The immune system is also severely affected leading to recurrent infections and serious conditions such as Chronic Fatigue Syndrome, Fibromylagia and Candidiasis. The good news is that the effects of nutritional stress can be reversed through a combination of a more alkaline forming, plant based diet as well as some effective whole food nutritional supplements. Every major epidemiological study concludes that those who consume animal products, including fish (mostly contaminated with mercury and other cancer causing chemicals), milk, dairy products and chicken eggs, have significantly higher incidences of heart disease, cancer, diabetes, arthritis and osteoporosis. Organic or not, studies show that meat eating is associated with greater morbidity and premature death. People who follow mostly a plant based diet can run into problems if they rely too heavily on dairy products and wheat and do not eat a large variety of different vegetables, fruits, legumes and other low gluten whole grains. This approach is effective for anyone interested in improving their health status. It is also an established biochemical fact that all disease, especially cancer, heart disease, diabetes and arthritis exists in an acid medium. All animal products, refined foods and most high gluten grains create an acid condition in the body. Plant based diets create more of an alkaline body pH. The meat based low carbohydrate or "cave man diet" advocated by many high protein diet gurus often does more harm than good because it creates an acid body pH and often a diseased state termed ketosis. It is therefore not uncommon to see patients with celiac disease, Crohn's disease or candidiasis who have been on long term meat based diets suffering from the side effects of excess acid: greater fatigue, muscle wasting and dehydration. A common symptom of candidiasis is constipation, a nuisance worsened by meat consumption, organic or otherwise. The high protein, low carbohydrate diet may well be in vogue today but it will soon be a passing fad just like many other diet crazes of the distant, forgettable past. Nutritional Stress Nutritional Stress "“ The Modern Plague By Brendan Brazier As a professional endurance athlete, my number one job is to create stress"”then deal with it. That's it. I stress my body, allow it to recover, and then do it again. Simply put, stress is anything that causes strain on the body, regardless of its origin. An important fact to be cognizant of is this: The body's response to stress is the same, whether it be the physical demands of sport, the environmental strains of breathing impure air, poor diet or the hectic pace at which most of us now live. Commonly accepted as one of the leading causes of illness, stress has been shown to precipitate many forms of diseases. It's easy to say, "Reduce the amount of stress in your life and you'll be healthier". While this is generally a true statement, it's advantageous to "select" your stressors; cultivate the beneficial ones and eliminate the unbeneficial. A full, productive life will undoubtedly be a catalyst for an elevated stress level. Stress slows progress and therefore it must be minimized for us to reach full potential. Success at anything starts with the ability to effectively cope with stress. However, our bodies are not equipped to deal with many of the modern day requirements placed on them; they simply have not evolved to effectively cope with our increased demands. As most of us know all too well, our lives are a non-stop dance from one task to another. The average North American works more now than ever before, and that amount continues to increase as we "progress." But work is just one stressor. Others include the demands of social life and family obligations, diminishing air and water quality, and most significantly, less nutritious food and lower quality diets, resulting in a society that is chronically stressed. How significant is our diet as a source of stress? It is estimated that as much as 40% of overall stress can be classified as nutritional. Nutritional stress is an epidemic, our modern day plague. Yet it exists in relative obscurity, underestimated and unseen by most, and growing constantly. Factors contributing to nutritional stress include the consumption of overly processed foods, foods grown with chemical pesticides and herbicides, inadequate supply of vitamins, minerals, enzymes, high quality protein, fiber, essential fatty acids and good bacteria (probiotics). It also includes the overeating of "empty" foods and the under-consumption of nutrient dense whole foods that support biological function, activity level and regeneration. Semivegetarian Semivegetarianism and Reduced Meat Eating Adapted from Meat, Meat eating and Vegetarianism: A Review of the Facts By Professor Neville G Gregory, Massey University The real threat to the meat industry in the future is from reduced meat eating and semivegetarianism. Recent polls in the United Kingdom have estimated the prevalence of reduced meat eating at 26 to 40%. It is due to a number of features including pursuit of the vegetarian ethic which advocates abstention from meat as a route to harmony with animals and nature. Semivegetarianism is particularly strong amongst young females and appears to be linked to a feminist outlook. It could persist through to adulthood, either out of conviction or from habit, and it could proliferate through the families that todays young semivegetarians eventually raise. When their children are brought-up in a semivegetarian household and with the outlook that semivegetarianism is the normal and right thing to do, reduced meat eating will become firmly established. It might be thought that the present trend toward reduced meat-eating reflects a desire to live a long and healthy life. However, the evidence suggests that only 19% of full and semivegetarian adolescent women viewed meat-eating as unhealthy, and this outlook existed in only 3% of non-vegetarians. As vegetarian foods are being more commercialised, they are becoming more attractive and popular in their own right. In 1990, a survey of 11 to 15 year olds in the United Kingdom that was sponsored by Barclays Bank showed that in 14% of the sample the favourite food was vegetarian. It is difficult to say whether this will grow. It may be that adolescent semivegetarianism or full vegetarianism is a phase which individuals grow through and that the recent swing towards reduced meat-eating will stabilise. In some individuals, however, it may persist into adulthood and their offspring will be brought-up as reduced meat eaters. Undoubtedly, there is a familial basis to vegetarianism. For example in a study on one hundred Americans who had vegetarian leanings, it was shown that 63% claimed that they would raise, or were already raising, their children on the same vegetarian regime (Dwyer et al, 1974). Although Animal Welfare has been the single most important reason for people becoming fully vegetarian, health reasons are probably playing an important part amongst semivegetarians. There are concerns about cardiovascular disease, cancer, Creutzfeldt Jacob disease, Salmonellosis and the consumption of hormones and antibiotics. At the other extreme it is widely held that strict vegetarianism can introduce health risks, especially for infants. There is a strong emphasis on mental and bodily health in the vegetarian outlook. Oneness and wholeness are important abstract concepts in the vegetarian's perception of mental and physical health. Oneness means that the individual is at peace with nature. Nature is often considered more valuable than culture, and this outlook has helped sustain the Natural and Health Food Industries. The vegetarian outlook despises the way that modern culture has moved towards greater reliance on refinement, cooking and further processing of foods. In ardent vegetarianism, food is believed to be more "natural" if it is eaten raw, and choosing raw foods is seen as an escape from highly processed foods which are regarded as junk (false) foods. Whole foods, such as whole grains and whole nuts are seen as more full of life and vibrant. Their wholeness is synonymous with being unadulterated. Whereas, meat is regarded as a dead food which is in the process of decomposing and eating it is synonymous with ingesting death. Even amongst meat-eaters meat does not have an image of being a "health food", but it may be thought to be "good for health".

Are you a Flexitarian? Are You a 'Flexitarian?' Meat-Eating Vegetarians Transform the Movement By J.M. Hirsch, The Associated Press Even after five years, Christy Pugh has no trouble sticking to her vegetarian regimen. The secret to her success? Eating meat. "Sometimes I feel like I'm a bad vegetarian, that I'm not strict enough or good enough," the 28-year-old bookkeeper from Concord said recently. "I really like vegetarian food but I'm just not 100 percent committed." Pugh is one of a growing number of part-time vegetarians whose loose adherence to the meat-free diet is transforming a decades-old movement and the industry that feeds it. These so-called "flexitarians" - a term voted most useful word of 2003 by the American Dialect Society - are motivated less by animal rights than by a growing body of medical data that suggests health benefits from eating more vegetarian foods. "There's so many reasons that people are vegetarians ... I find that nobody ever gives me a hard time when I say I usually eat vegetarian. But I really like sausage," Pugh said. In recent years the market for vegetarian friendly foods has exploded, with items such as soy milk and veggie burgers showing up in mainstream groceries and fast food restaurants. But even the diet's activists say that growth can't be attributed to committed vegetarians, who are estimated at about 3 percent of the adult U.S. population, or about 5.7 million people never eating meat, poultry or seafood. Charles Stahler, co-director of the Baltimore-based Vegetarian Resource Group, credits the growth to flexitarians - vegetarians who dabble in meat and carnivores who seek out vegetarian meals. "This is why Burger King has a veggie burger. It's not because of us," he said. "The true vegetarians wouldn't rush to Burger King anyway. It's because of those people in the middle. They are the driving audience." Though flexitarian headcounts are imprecise, Stahler estimates roughly 30 percent to 40 percent of the population at least occasionally seeks out vegetarian meals. Suzanne Havala Hobbs, a dietitian at the University of North Carolina at Chapel Hill, credits the growth of flexitarianism to the nation's better understanding of the diet-disease connection. "Whether you make a commitment to eating strictly vegetarian or not, cutting back your dependence on meat is something most people acknowledge they know they should do," she said. Mollie Katzen, a cookbook author and a founder of the iconic vegetarian eatery Moosewood Restaurant in Ithaca, N.Y., takes another perspective. The former vegetarian thinks people who eschew meat would be better off if they didn't. Though she still advocates vegetable-based diets, Katzen sees room - and for many people a need - for flexibility. "To base our diet there, yes. Absolutely," she said. "However, where the protein comes from in that diet, I don't feel it's wrong if you've got a great big plate of vegetables your protein is from a healthy, happy chicken, or a grass-fed cow." Plenty of people seem to agree. At Wild Oats stores, a Boulder, Colo.-based chain of natural foods grocers that cater to vegetarians, the majority of shoppers aren't vegetarians. Tracy Spencer, a spokeswoman for the company, said Wild Oats shoppers are concerned about health and want the grocer's natural and organic products, including meats. Publishers of vegetarian magazines also are taking notice. To target the part-timers many have softened their approach to meatless diets, even at risk of alienating the far smaller reader pool of true vegetarians. Until last year Natural Health, a Woodland Hills, Calif.-based magazine with a monthly circulation of 300,000, published only vegan recipes, which exclude even dairy and honey. Now the recipes regularly include meat, said Barb Harris, the magazine's editorial director. "There is a big interest in vegetarianism," she said. "But we can also tell from our readership that these are not people who are following a pure vegetarian lifestyle. These are people who are integrating a vegetarian menu in their current diets." A similar change occurred at the 30-year-old Vegetarian Times, considered the standard-bearer of vegetarianism. Bruce Friedrich, spokesman for Norfolk, Va.-based People for the Ethical Treatment of Animals, said he doesn't see any harm in vegetarianism focusing more on food than the issues that spurred the movement. "From our perspective, if people influenced by health consequently cut back on fish and meat consumption, that helps animals," he said. "If two people cut their meat in half it helps as much as one person going completely vegetarian."

I'm no professional bodybuilder (by a long shot!) but nevertheless have some experience with using protein supplements since the mid 1980's. I'm a Flexitarian! By Clarence Bass, Author of Lean for Life I've just discovered I'm a flexitarian"”and that I've got lots of company. According to Charles Stahler, co-director of the Vegetarian Resource Group, a substantial percentage of the population leans toward vegetarianism, but is willing to eat meat, fish or poultry occasionally or in small amounts. The term flexitarian was apparently coined in the early "˜90s, but is only now finding its way into the mainstream. Flexitarians are flexible in what they eat. According to an Associated Press story by J.M. Hirsch that ran in newspapers all over the country, the term flexitarians was voted the most useful word of 2003 by the American Dialectic Society. When you realize how many people are included under the flexitarian umbrella, you'll appreciate why the term is so handy. While people who never eat meat, poultry or seafood are estimated at 3% (about 5.7 million), those who at least occasionally eat vegetarian food may be up to 40% of the population. According to the AP piece, the growing number of part-time vegetarians has had a huge impact on the food industry. "In recent years the market for vegetarian friendly foods has exploded, with items such as soy milk and veggie burgers showing up in mainstream groceries and fast food restaurants," Hirsch wrote. Health food markets such as Wild Oats or Whole Foods, which cater to vegetarians, but also sell wonderful meat, fish and poultry are popping up everywhere"”and for good reason. Suzanne Havala Hobbs, a dietician at the University of North Carolina at Chapel Hill, credits the growth of flexitarianism to a better understanding of the diet-disease connection. "Whether you make a commitment to eating strictly vegetarian or not," she told the AP writer, "cutting back your dependence on meat is something most people acknowledge they know they should do." Another perspective is that vegetarians are more likely to insure an adequate intake of protein if they don't avoid the complete protein found in meat, fish and chicken. That's the view of Mollie Katzen, a cookbook author and founder of the Moosewood Restaurant, an mostly vegetarian eatery located in Ithaca, N.Y. She advocates a flexible vegetarian-based diet. "I don't feel it's wrong if you've got a great big plate of vegetables," she told Hirsch, "[that] your protein is from a healthy, happy chicken, or a grass-fed cow." I agree on both counts. What's more, flexitarian eating helps you stay lean. Atkins-diet hype notwithstanding, people who eat lots of whole grains, fruits and vegetables are the leanest people on earth. And, believe it or not, those who eat the most animal protein are the fattest. That's what a recent four-nation survey shows. The study, reported by WebMD News on March 5, 2004, was based on food diaries kept by 4000 men and women age 40 to 59 in the United States, Great Britain, Japan and China. "Without exception, a high-complex-carbohydrate, high-vegetable-protein diet is associated with low body mass," study leader Linda Van Horn, PhD, of Northwestern University said at the 44th American Heart Association Annual Conference on Cardiovascular Disease Epidemiology and Prevention. "High-protein diets were associated with high body weight." Be clear, however, we're talking about whole foods the way they come in nature, not French fries and white bread. "The point we are trying to make is that what we consider desirable carbohydrates are complex, or high-fiber-containing carbohydrates: whole grains, fruits, and vegetables"”not doughnuts or even polished rice," Van Horn said. "We are looking at legumes and vegetables that offer fiber as well as protein. We're not talking about refined carbohydrates, commonly known as sugar." How this works is really pretty simple. Vegetarian or plant foods are generally low in fat and high in fiber. They fill you up and make you feel satisfied without giving you more calories than you burn. While low-fiber, animal foods--especially fat-laden varieties--take up little room in your stomach. They are calorie-dense foods. They pack a lot of calories in a small volume. That, of course, makes it easy to overeat. (See my book Lean For Life for specific examples.) Whole grains, fruit and vegetables, which make up the major part of my diet, fill you up without giving you too many calories. The fiber and bulk in these foods guarantee that you never leave the table physically hungry. Your stomach is full. But you may still crave the taste of animal foods. Cravings tend to build over time. If not satisfied, they usually lead to overeating--or worse, bingeing. Flexitarian eating can save the day. You don't have to be a total vegetarian to derive the major benefits of a vegetarian diet. It does no harm to add a little meat, chicken or seafood to a vegetable-based diet to add flavor"”and satisfaction. That's a switch for most Americans. They use meat as the main course, while I use animal food mainly to add flavor. And it doesn't take much. An ounce or two of animal protein adds a great deal of eating pleasure to grains, beans or vegetables"”and only a few extra calories. Take it from my flexitarian friends and me: A little flexibility in your diet will make and keep you satisfied"”and lean.
